About Our Company

Oka Naosaburo Shoten was founded in 1787 during the Edo period.
We produce soy sauce using carefully selected domestic whole soybeans and wheat, fermenting it in traditional KIOKE (wooden barrels), a method that accounts for only 1% of total soy sauce production. The moromi (fermenting mash) is meticulously managed by our artisans and undergoes a slow fermentation and maturation process, influenced by the natural microorganisms in our brewery and the changing seasons. This process creates a one-of-a-kind aroma and umami.

Our Craftsmanship

For generations, we have preserved and used large wooden barrels for fermentation. These barrels are crafted without a single nail, a skill that only a few artisans in Japan can still master today. The brewery’s wooden beams and barrels are home to natural microorganisms essential for fermentation, which play a crucial role in determining the depth of flavor and aroma of our soy sauce.

We are committed to using 100% domestically sourced ingredients, with whole soybeans from Japan and wheat from Gunma Prefecture. Our Organic Dark Soy Sauce (First Press) and Organic Double Aged Soy Sauce are made from rare, domestically grown organic whole soybeans and organic wheat, ingredients that are extremely limited in Japan.

Commitment to Manufacturing Standards

Ensuring trust and safety requires more than just premium ingredients and traditional methods. In 2020, inspired by the Tokyo Olympics, we conducted the largest modernization project since the Meiji era, achieving global standards by obtaining ISO and FSSC22000 certifications. Today, with state-of-the-art facilities and stringent quality control, we continue to produce safe, high-quality products for customers worldwide.

    A naturally brewed tamari soy sauce made from 100% domestic soybeans and salt, aged for over a year in wooden barrels. Gluten-free, making it a safe choice for those with wheat allergies.
